The following are more, famous recipes served to the children at Barbie's Family Child Care!

 

Meatball Subs

Frozen Meatballs

Healthy Choice Garlic & Herb Pasta Sauce

Whole Wheat Hot Dog Buns

Mozzarella Cheese, shredded

 

Heat meatballs and pasta sauce in microwave according to meatball package.  Place 4-5 meatballs in each hotdog bun.  Sprinkle with cheese.  Cut in half to serve.

 

Chicken

Chicken is prepared in few different ways.  Most often, it involves picking up a precooked roasted chicken from Kroger and asking Brett to chop in into hunks for me.  Sometimes I buy fried chicken at Kroger because I can get more legs (or chicken bones as the children call them) that way.  Other times the chicken is roasted here at my house (I have no idea how it’s done, honest!)  And sometimes it is breaded and cooked as described in the following recipe and served without sauce or cheese (and yes, I do cook this version all by myself.)

 

Chicken Parmesan

Chicken Breasts, boneless and skinless

Seasoned Bread Crumbs

Parmesan Cheese

Garlic

Minced Onion

Black Pepper

Oregano

2 Eggs

Water

Margarine

Pasta Sauce

Mozzarella Cheese, shredded

 

Cut chicken breasts into long strips of similar sizes.  Mix bread crumbs, parmesan, and spices in a bowl.  Mix eggs and water in another bowl.  Heat margarine in frying pan.  Dredge chicken in bread crumb mixture, then eggs, and then bread crumbs.  Heat in frying pan until browned and cooked thoroughly.  Place chicken pieces in baking dish and cover lightly with sauce and cheese.  Bake in oven at 350 until cheese is melted or heat in microwave.

 

Ham

Ham is either a ham steak which is heated in the microwave oven or sandwich ham, served cold.

 

Sloppy Joes

Ground beef

Manwich sloppy joe sauce

Whole wheat hamburger buns

 

Brown the ground beef.  Mix with the sloppy joe sauce.  Serve on hamburger buns.  (Most children start with ½ of a sandwich.)

 

Turkey

Turkey is almost always sandwich meat turkey served cold.  Occasionally, we will have pieces of roasted turkey.

 

Quesadillas

Take two large flour tortillas and put shredded cheddar cheese in between them. Microwave for about 2 minutes to melt the cheese.   Let cool and cut into pie shaped pieces.

 

Pizza

www.papajohns.com  Be sure to leave plenty of time in case they get lost or mess up the order.  Feel free to serve salad and fruit before the pizza arrives.  (That way you’ll get to eat more pizza b/c they’ll be too full to eat much.)

 

Or buy Pillsbury refrigerated pizza dough.  Spread dough into a glass baking dish (9x13) which has been sprayed with Pam.  Spread with a light coating of spaghetti sauce.  Top with pepperoni pieces (they don’t seem to care if it’s regular pepperoni or turkey) and shredded mozzarella cheese.  Bake according to package directions.  The children LOVE to help make this pizza!!!

 

Sandwiches

Sandwiches consist of 2 pieces of whole wheat bread and a filling.  Then they are cut into halves for the older kids and quarters for the younger kids (or those that whine, “I don’t like (fill in the blank)!”)  The fillings are one of the following: American cheese, turkey, ham, tuna mixed with ranch dressing, peanut butter or peanut butter with jelly (usually strawberry or grape no sugar added type).  That’s it…no mayo, mustard or anything fancy added. 

 

Chef Salad

Buy a bag of salad at the grocery store.  Generally something with mixed greens but not fancy.  Add shredded carrots (also bought in a bag), cherry or grape tomatoes, cucumbers cut in circles, and shredded cheddar cheese.  Mix this with ranch dressing.  When serving, add some sandwich turkey and ham and some American cheese; all cut into long strips.  Serve with breadsticks, banana and milk and you have a complete meal!

 

Ham and Cheese Croissant

Wrap some sandwich ham and shredded cheddar cheese inside crescent rolls.  Bake in the oven according to package directions.  These are generally cooked ahead of time and served cold.

 

Rice:

Usually “Rice” on the menu is Knorr Rice Sides Cheddar and Broccoli. 

Sometimes it is regular white rice.

 

Vegetables:

Lunch usually consists of at least on type of vegetable.  Raw vegetables include lettuce, spinach (shhh we call that lettuce), tomatoes, baby carrots (or shredded carrots), cucumbers, and celery.  Ranch dressing is a must for raw veggies!  Frozen (heated up in microwave) veggies include peas, green beans, mixed vegetables, broccoli, corn, lima beans, and carrots.  Other vegetables include baked potatoes, sweet potatoes (both baked in microwave usually), baked beans, kidney beans, french fries, and refried beans.  Other vegetables are served from time to time, for variety.

 

French Fries

Buy Ore Ida French Fries.  Follow directions for the real oven, except you will have to compromise between those directions and the ones on the Fishsticks or Chicken Nuggets package.  Why can’t they just pick one temperature and one cooking time?

 

Breakfast Foods:

Breakfast foods are very simple. 

Put Cheerios or Kix Cereal in a bowl.  If the child is not a huge mess when eating, milk can be added to cereal.  

 

Pancakes are cooked in the microwave according to the package (although occasionally we get reheated sourdough pancakes if Brett made some on the weekend). 

 

For toast, waffles, and bagels, pop them in the toaster and try not to have any black parts on them when they are done.  Toast is served with margarine on top.  Bagels have cream cheese (or margarine if child doesn’t like cream cheese).  Waffles and pancakes are usually the “mini” sized ones and are served plain.  But occasionally they have larger waffles or pancakes and occasionally they will have a light dusting of powdered sugar on them. 

 

Biscuits and crescent rolls are cooked according to the package directions, in the regular oven.

 

Quesadillas are flour tortillas with cheddar cheese in them, microwaved to melt the cheese and cut into pie shaped pieces.

 

Breakfast always includes a fruit and a cup of milk along with the above.
